Chocolate Lava Cake

A couple of weeks ago I discovered The Pioneer Woman's cooking show.  The show popped up on Netflix.  I've heard of her before, but I had never seen her show because we do not have cable.  I had not ever been to her blog.  I had knew she has a cooking show and lives in Oklahoma.  Anywho, after I binge-watched five episodes, I asked my Facebook friends about her.  Apparently, everyone has heard of her and seen her show.  

My friend, Jenny, brought me one of her Pioneer Woman cook book today.  It's called The Pioneer Woman Cooks Food From My Frontier.  I haven't made anything from it yet, but I already like it because she has step-by-step instructions with pictures.  Very helpful for a person like me who is culinarily challenged.

Oh, I almost forgot to tell you that I made a corn casserole for Thanksgiving.  I found a recipe on Pinterest.  I wanted a crockpot recipe that would be easy to make and that I wouldn't have to cook or prepare at my mom's house.  It only called for a can of corn, a can of creamed corn, one package of Jiffy cornbread, one stick of butter and a cup of sour cream.  I doubled the recipe and threw it in the crockpot for four hours.  By the time it was time to eat, the middle had somehow liquified.  The outsides and bottom had burned to nice charcoal color.  My sister thought it was a cheese dip.  It was sad.  I redeemed myself a few days later when my friend, Mrs. Courtney, gave me her recipe for corn casserole.  Same recipe, just cooked in the over for 45 minutes instead.  Perfection.  I wish I had a picture of the first corn casserole.  It was horrendous.  

However, today's experiment was not horrendous at all.  It was a little bit of heaven.  I found the recipe on Pinterest when I was searching for Pioneer Woman recipes.  Actually, the recipe I found on her blog was a guest post so it isn't technically isn't a Pioneer Woman's recipe.  It's from Tasty Kitchen.  The Tasty Kitchen calls the recipe a chocolate cobbler, but it's more like a chocolate lava cake.  It is so delicious and easy to make.  If you bake even just a little, you'll most likely have everything in your pantry.  The last step in the recipe is different than any other cake recipe I've seen, but it turned out perfectly.  It was a hit for my whole family.  Of course, I topped it with vanilla ice cream. I could also see drizzling it with caramel sauce.  Mmmmm.

So you basically make a chocolate cake.


Then you make a cocoa, sugar and brown sugar topping you spread on top of your cake.  Next, this is the step that is a little different.  You add a some hot tap water on top of of the sugar topping.


Slide it into the oven and bake for 45 minutes.  When you pull it out, it looks similar to brownies.


However, when you cut into it, you see the chocolate goodness or "lava".


Scoop it out, top it with a scoop of vanilla ice cream and try not to eat the rest of the cake.

Chocolate Lava Cake

Ingredients:

1 C. of all purpose flour
2 t. of baking powder
1/4 t. of salt
7 T. of cocoa powder, divided
1 1/4 C. of sugar, divided
1/2 C. of milk
1/3 C. of melted butter
1 1/2 t. of vanilla extract
1/2 C. of light brown sugar, packed
1 1/2 C. of HOT tap water

Directions

1.  Preheat oven to 350 degrees.
2.  Combine flour, baking powder, salt, 3 T. of the cocoa, and 3/4 C. of the white sugar. Reserve the remaining cocoa and sugar.
3.  Stir in the milk, melted butter, and vanilla to the flour mixture. Mix until smooth.
4.  Pour the mixture into an ungreased 8-inch baking dish.
5.  In a separate small bowl, mix the remaining white sugar (it should be 1/2 cup), the brown sugar, and remaining 4 tablespoons of cocoa.
6.  Sprinkle this mixture evenly over the batter.
7.  Pour the hot tap water over all. DO NOT STIR!
8.  Bake for about 40 minutes or until the center is set.

Let stand for a few minutes and serve topped with a scoop of vanilla ice cream.

Let stand for a few minutes if you can hold yourself back.

My Low/High of the Week (So Far)

It's only Wednesday, but I'm going to go ahead and write about my low/high for the week.

Two Sundays ago, my daughter hurt her right knee on a trampoline.  She was getting off the trampoline and her leg got caught between the springs.  Her left leg landed on the ground, but her right knee got twisted and bruised pretty badly between the springs.  My sister iced it and gave her some Ibuprofen.  She went back outside to play, but was limping.  

The next two days she limped around.  By Wednesday, she wanted to participate in P.E. so she did everything except run.  She didn't have any pain or discomfort.  However, on Thursday she went to tae kwon do and while she was jumping and kicking she popped her hurt knee.  It immediately swelled and was causing pain.  She told me the pain was in a different area of the right knee.  Again, we iced it and gave her Ibuprofen.  By Saturday, she didn't seem to have any pain, limping, and it seemed the swelling was gone.  

The officer asked me to and make her a doctor appointment since she had hurt it twice in one week.  This past Monday she went on a 30 minute bicycle ride with me and she seemed fine.  I didn't think she really needed the dr. appointment, but I made it. 

Tuesday, we went to the pediatrician. She asked me what was wrong with daughter.  I told her all the things that had happened and told her the officer wanted us to come in.  

The doctor washed her hands and said, "Well let's have a look.  Please sit back on the bed and let me see your knees.  Oh, well I can tell her knee is still swollen."

"What?  Where?", I asked.

"Right here.  You can see the left knee outline along here, but you can't see right knee outline here.", she replied.

Oh.  Now I see it.

She told me she wanted daughter to go see an orthopedist since it was still swollen.  No physical activity until she sees him.  No running, no P.E., no tae kwon do (she's not real broken up about that one), only walking with a knee brace.  We went to Academy to purchase a knee brace.  The man who was helping us also said, "Oh yeah, you can tell her knee is swollen."  "Oh yeah, you mean right here.  Yeah I saw that too."  No need for him to know that I didn't see it all week too.

So there you have it.  I would have just let her gone on and on and she probably would have hurt her knee again.  I need to just pay attention to the officer advice.  Good lesson here.

My high for the week is the Tuscaloosa Tollhouse Pie I made tonight for dessert.  I found the recipe this week on Pinterest.  You can find the original recipe at Becky's Bakes blog.  I did cheat and did not make my own pie crust.  You can use Becky's Bakes link to get the recipe for the pie crust.  I used trusty old Pillsbury.  Also, I omitted the whiskey.  If anyone has any tips on how to apply aluminum foil on the outside pie crust in a hot pie pan, I'm all ears.



Tuscaloosa Tollhouse Pie

Ingredients

1/2 cup all-purpose flour
1/2 cup sugar
1/2 cup firmly packed brown sugar
2 eggs, room temperature
3/4 cup (1 1/2 sticks) unsalted butter, softened and cut into pieces
3/4 cup walnuts, toasted and chopped
1 1/4 cups chocolate chips


Directions

1.  Preheat oven to 350 degrees.
2.  In a bowl, whisk together flour and sugars; set aside.
3.  Beat eggs on high speed until foamy, about 3 minutes. 

4.  Mix in flour and sugars on low. Turn mixer to high and beat for 2 minutes.
5.  Add butter and beat on high until combined.
6.  Fold in walnuts and 3/4 cup of chocolate chips.
7.  Pour filling into chilled pie shell, scatter remaining 1/2 cup chocolate chips across the top
8.  Bake for 25 minutes. 
9.  Cover edges of crust with foil and bake for another 25 minutes
10.  Remove from oven when inserted knife or pie tester comes out clean. Cool on a cooling rack completely (at least one hour) before serving.

Peanut Butter Lava Cookies

Tonight I made Peanut Butter Lava Cookies for an upcoming playdate. I pinned this recipe on Pinterest about a week ago because it fit my five ingredients or less requirement.  :) It only has three!

You can find the original recipe at the Oh Bite It blog.  I think this could be tweaked many ways to make different variations.  I think next time I'll had a thin layer of Nutella or mini chocolate chips.  You could use chunky peanut butter.  I just used what I had in the pantry.  The upside - this is so very easy and quick.  The downside - it only made 14 three inch cookies.  If you were making this for a get together, you might need to double the recipe. 

I did try to press the fork into the cookies to make the peanut butter design, but two cookies busted open so I didn't do all of them.  You couldn't really see the design once they baked anyway.  Also my cookies did not really turn out like "lava".  They were not ooey-gooey, but they were very good.  If you were going to make this for Thanksgiving or Christmas, you could used the colored sugar for the finishing touch. 



Here's the recipe:


Peanut Butter Lava Cookies 

Ingredients

1 package of pie crust
2 c. of peanut butter
1/2 c. sugar


Directions

1.  Preheat oven to 350 degrees.

2.  Unroll the pie crust and spread an even layer of peanut butter on the pie crust.  Add any additional toppings.  


3.  Carefully put the lay the second layer on top.


4.  Use a cup or cookie cutter and cut out your cookies.


5.  Cover each cookie with sugar and place on baking sheet lined with parchment paper. 


6.  Bake at 350 degrees for 12 minutes.  

7.  Let cool and then toss them in the sugar again.

My Life Just Got Easier :)

If you've read this blog for any amount of time, you know that I do not like to handle raw meat.  When you think about it, it's amusing the officer is such a meat and potatoes kind of guy.  My dislike of handling raw meat and my dislike of 2nd degree grease burns meant I had never cooked bacon until 4 years after I was married.  I hate getting splattered with grease.  It never seems to bother the officer.  However,  I am always sure I am going to get splattered in the eyeball, which would lead me to have to deal with my eyeball which is a whole other story/fear/issue of mine.  

Enter Pinterest.

I saw a pin the other day about cooking bacon in the oven.  Apparently, people have been doing this for years.  It is revolutionizing the way I cook bacon.  I am making crock pot potato soup and needed some bacon for a topping.   I thought this was the perfect time to try cooking the bacon in the oven.  No one was starving and waiting for breakfast.  If it didn't turn out, I would have ample time to cook the other half the regular way in a skillet.  

Here is what you do:

1.  Line you lipped cookie sheet with aluminum foil.  Wrap it around the edges.  This will keep the grease from leaking and smoking up your kitchen.

2.  Put the back on the foil.  My friend, Kristi, told me to put a cookie rack on top of the cookie sheet and put the bacon on it.  Then the grease drips off onto the cookie sheet and your bacon is not sitting in the grease.  I will most likely purchase a cookie rack.

3.  Put it in the oven.  Turn oven on 375 and cook for 20 minutes.  You do not turn the oven on before you put the bacon in.

4.  Remove bacon from cookie sheet or rack immediately.  Leaving it the sheet or rack may cause it to stick.

I had a picture of my bacon but it looks burned.  Horrible picture because the bacon turned out great.  Nice and crispy.  It was so easy!  I didn't have to worry about getting splattered with grease.  Clean up was easy because I just threw away the foil.  I didn't have to go back and forth to the skillet turning it.  I checked the oven and I don't have grease splattered all inside of it. 

I would imagine with thicker cut bacon you would have to bake it longer and with thinner bacon a little less time.  I used the regular bacon from Braums.  Worked like a charm.  

Cream Cheese Banana Chocolate Chip Muffins

Last night during the storms, I listened to Gary England's live stream and perused Pinterest.  Very exciting right?  I found a good recipe, so at least it was productive night.  :) I knew I had all of the ingredients, so my daughter and I made them this morning.

You can find the original recipe at the Sugar & Spice blog.  I read through all the comments and I tweaked a few things.   You can tweak it any way you want to.  Also, I only had three bananas so I halved the recipe.  It made 12 muffins.  Halving the recipe will also make one loaf pan.  Here is the recipe.  I'll let you know what I changed.
 


Cream Cheese Banana Nut Bread

Ingredients

3/4 c. butter, softened
1 (8 oz.) pkg. cream cheese, softened
2 c. sugar
2 large eggs
3 c. all-purpose flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 cups mashed bananas (about 4 medium bananas)
1 cup roughly chopped pecans, toasted (I substituted mini chocolate chips)
1/2 tsp. vanilla extract
1/4 tsp. of cinnamon (optional)

Directions

1.  Beat butter and cream cheese at medium speed with an electric mixer until creamy.
2.  Gradually add sugar to butter/cream cheese mixture until light and fluffy.
3. Add 1 egg at a time, beating until just blended.   
4.  Combine flour, baking powder, baking soda, salt and cinnamon (if you are using it) in another bowl.
5.  Gradually add flour mixture to butter mixture at low speed until blended.
6.  Stir in bananas, vanilla, and pecans (or chocolate chips or whatever other mix-ins you want).
7.  Spoon batter into two greased and floured 8x4 in. loaf pans. 
8.  Bake at 350 for 1 hour or until long wooden pick inserted in center comes out clean.  Let cool for 10 minutes.

As I said before, I read through the comments and some people tweaked a few things.  For the regular loaf pans, some added foil the last 15 minutes to prevent browning.  Others opted to use mini loaf pans.  For a regular muffin pan I baked them at 350 for 25 minutes.
 


They turned out great!  I love nuts so next time I'll try to add some pecans.  I just didn't have any on hand.

Peanut Butter Toffee Bars

I finally made a dessert from Pinterest that turned out pretty much like it was supposed to and looked like the actual picture!  Not to mention, they were pretty yummy!  My favorite candy bar is the Heath Bar so when I saw this recipe on Pinterest I was pretty sure it would be awesome.  

They were easy to make and they didn't take long. The longest portion was waiting for them to cool - not that we waited before we sampled it.  :)

Peanut Butter Toffee Bars

Ingredients

Aluminum Foil
1/2 C. of Butter (room temperature)
1/2 C. Creamy Peanut Butter
3/4 C. Packed Brown Sugar
1 Large Egg Yolk
1 1/2 C. Flour
1/2 C. Quick Oats
1/4 t. Salt
3 C. Dark or Semisweet Chocolate Chips (I used milk chocolate)
1 C. Toffee Baking Pieces 

Directions
  
1.  Heat the oven to 350°. Line a 9- by 13-inch baking pan with foil so that the ends extend over the edges of the pan by at least 2 inches.

2. In the large bowl of an electric mixer, beat the butter, peanut butter, sugar, and egg yolk on medium-high speed until the mixture is smooth and creamy, about 2 minutes, scraping down the sides of the bowl if necessary. Add the flour, oats, and salt and beat the mixture on low until the ingredients are just blended, about 30 seconds.

3. Press the mixture evenly into the bottom of the prepared pan. Bake the crust until it is golden brown, 15 to 20 minutes (be careful not to overbake).

4.  Remove the pan from the oven and scatter the chocolate chips evenly over the crust. Return the pan to the oven for 1 minute. Remove the pan again and, using a small offset spatula, spread the chocolate evenly over the crust.

5.  Sprinkle the toffee pieces over the chocolate, gently pressing them into place.

6. Set the pan on a wire rack to cool until the chocolate has set, about 2 hours. Using the edges of the foil, lift the dessert from the pan, then cut it into rectangles.

Crockpot Cheese Tortellini

Last night I tried another Pinterest recipe. 

I've been trying to try something new at least once a week.  So far the new recipes have been hits with everyone in the house.  This week I tried Crockpot Cheese Tortellini.  You can find the original recipe at Little Fellows.

I did alter her recipe opting for chicken instead of sausage.  It was very good.  Next time the officer said he'd like to try the sausage too.  Also I used spinach and just left it whole.  Overall, I was the only one who ate the spinach.  I bet if I don't use as much and cut it up much smaller next time they will eat it and not notice it.

Here's the recipe:

Crockpot Cheese Tortellini

Ingredients:

1 bag of Frozen Tortellini
1 small bag of Fresh Spinach
2 cans of Italian Style Diced Tomatoes (You can use regular diced tomatoes, but add seasonings)
1 box or 4 cups of Chicken Broth
1 block of Cream Cheese
1 lb. of Roll Sausage (I substituted 1 lb. of grilled chicken)

Directions:

1.  Brown the sausage, drain, and put all ingredients in crockpot.  I cut the cream cheese into small blocks before I added it.
2.  Cook on low for 5-6 hrs.

Some people have said the cream cheese doesn't melt very easily.  I just make sure I stirred it occasionally and smashed any chunks I saw.  There were no problems.

Pinterest Sminterest Can Only Do So Much

Well tonight my sweet officer decided to make some cookies.  He likes to bake every so often.  


My nice brother-in-law took a picture of him baking.  The officer was so involve in baking he was caught a little off guard.  To be silly, my brother-in-law posted the photo on Facebook.  Playing along, I liked the photo, commented on the photo, and encouraged others to "share" it.  :)  

A little later, the officer decided to go run to Sonic to get me a Vanilla Coke (I do love that man) and to Braums to get milk.  He had some cookies in the oven.  The timer went off just before he was walking out the door.  He came over to look at the cookies and said, "They need just a minute more.  I'll be back."  (No, he didn't use the "Arnold"voice.)  

I put the cookies back in the oven and went back to the game Draw Something.  I was trying to figure out what the officer's picture was (it was a picture of a man "planking")  and I heard the oven making noise.  No big deal.  It clicks and makes other noises when it's on.  The officer just wanted me to leave it on and not put the next batch in because he thought I'd burn them.  Silly man.  

I figured out the planking picture and was working on my "meter" picture.  I started to smell a burned chocolate chip.  I wondered to myself if a piece of cookie had fallen down to the bottom of the oven.

Even this passing thought did not motivate me to check before I finished my "meter" picture.  As soon as I finished I got up scrape the burned cookie off the bottom of the oven.  I opened the oven and found this....
 

I forgot he wanted to bake the cookies "just a minute" more.  Hockey pucks.  So he's not so silly after all.  Sadly, this is not the first time this kind of thing has occurred.  

Pinterest has been great with finding ideas for birthday parties, new recipes to try, great craft project, and getting a giggle, but it can't help me stop from burning a batch of cookies.  

Luckily the officer came home and finished the last batch.  I told him I would just tell the kids they are double chocolate chip cookies.  What do you think???

Parmesan Baked Potato.......

I tried a new recipe from Pinterest tonight.  From reading the recipe and directions, it sounded fairly easy to make. It was Parmesan Baked Potato Halves.  The original recipe came from the FavFamilyRecipes.com.   Don't they look yummy?  You can find the recipe here.  


Parmesan Baked Potatoes

Ingredients 

6 small potatoes, scrubbed and cut in half 
1/4 cup butter 
Grated parmesan cheese 
Garlic powder (I used minced garlic) 
Other seasonings (To personal preference)

Directions

1. Preheat oven to 400 degrees. 

2.  Melt butter and pour into a 9x13 inch pan and spread evenly across the bottom. 

3.  Generously sprinkle Parmesan cheese and lightly sprinkle other seasonings all over the butter. 

4.  Place potato halves face down on the butter and seasonings. 

5.  Place in preheated oven and bake for 40 to 45 minutes. 

6.  Cool for 5 minutes before removing from pan. 

Serve on a plate with a side of sour cream for dipping.

This is what it looked like before I put it in the oven.  They smelled delicious as the Parmesan cheese, butter, and garlic melted into yummy goodness.  


I had my sour cream at the ready on a plate.  I pulled out the pan and I noticed the Parmesan cheese was pretty brown on the edges.  This didn't matter to me because I like things a little on the brown side.  The browned Parmesan cheese was not the issue.  The fact that the cheese mixture stuck to the bottom of the pan was the issue.

Next time I will put these with the cut side up and top the potatoes with the Parmesan mixture and see how that goes.  I am unsure how this could turn out any different if I did it again.  Have any ideas?  Leave me a comment.  :)

Not Enough

I read a great blog post this morning.  My friend, Becky, posted it on Facebook.  It was on the blog Power of Moms.  It's titled "Your Children Want You".

Her post was about how we as moms can often feel inadequate when we get on Facebook, Pinterest, Twitter, and blogs.  We see all the amazing things "other" mothers are doing and we feel as if we are failing as mothers and wives.  

I know I don't often post about horrible days, but I have before.  You can read about long homeschool days here and here.  And there are so many things I am still trying to learn at the almost age of 40 (it will be here in less than two month - OY) that it has it's own label on my blog.

So I just wanted to encourage you mothers out there today too.  I have many days when I would like to just curl up and watch a good movie or read a good book instead of teaching my kids multiplication facts.  You can still hear on a hourly basis, "Please stop pestering your sister!"  Actually it's more like, "PLEASE STOP PESTERING YOUR SISTER!"  I burned the cinnamon rolls this morning (and these were not Pinterest cinnamon rolls either, they were just plain old Pillsbury).  However, icing covers a multitude of sins.  :)   I think it's one of the main areas Satan knows he can grab ahold of us and tear us apart.  But God says something different:

Do you not know?
   Have you not heard?
The LORD is the everlasting God,
   the Creator of the ends of the earth.
He will not grow tired or weary,
   and his understanding no one can fathom.
 He gives strength to the weary
   and increases the power of the weak.
 Even youths grow tired and weary,
   and young men stumble and fall;
 but those who hope in the LORD
   will renew their strength.
They will soar on wings like eagles;
   they will run and not grow weary,
   they will walk and not be faint.
 Isaiah 40:28-31

God knows our needs even before we know them.  He knows our weaknesses.  He knows our strengths.  He will use them all to his glory.  So even if no one sees you doing the 1,000 of loads of laundry, or even if you can't make the beautiful handmade dresses, or even if no one notices the 100 times a day you pick up the house, or even if you can't make that Pinterest recipe that has 20 ingredients (10 of which you've never even heard of), all the work as a mother and wive you do is not unnoticed by God.  As my Sunday School teacher said, "All that laundry is kingdom work!"  

Take time today to encourage one of your friends.  Tell them you appreciate them.  I received a word of encouragement yesterday from a college friend who I haven't seen in at least 10 years, that was just the perfect thing at the perfect time.  Thanks, Mrs. J. Resurrection Rolls

Here's my standard beginning for anything food related:

Found it on Pinterest. 

I am going to make these rolls with the kids on Saturday.  I thought I would go ahead and post the recipe so you can do it with your kids too.  There are only four ingredients and they are relatively inexpensive to make.  They are called Resurrection Rolls.  It's a great way to tell the kids about how Jesus is RISEN!


I got this recipe from Eat At Allie's blog.  You will find the original link for the recipe.

Resurrection Rolls

Ingredients:

1 can of crescent roll dough

8 large marshmallows (or one for each roll you’ll be making)
Melted butter
Cinnamon sugar

Directions:

1.  Read John 19 while the oven is preheating to 350.

2.  Unroll the crescent rolls and place on a rimmed baking sheet lined with parchment paper and explain this is like the cloth they wrapped Jesus in.

3.  Give your child a marshmallow and explain that it represents Jesus,all white and pure because He was without sin.

4. Roll the marshmallows in the melted butter.  This symbolizes the embalming oils.  

5.   Roll the marshmallows in the cinnamon sugar.  This is like the spices used to prepare his body for burial.

6.  Wrap the marshmallow in the crescent roll cloth, pinching the dough together securely.  This represents how they wrapped Jesus’ body.

7.  Put the rolls in the oven (symbolizing the tomb) and bake for 12 minutes.

8.  While the rolls are baking, read John 20:1-18. 

9.  Open the tomb and remove the rolls. When they’re cool enough to handle, break one open and discover what happened to the marshmallow.

JESUS IS RISEN!
 
I love these things where the kids can read the scriptures.  There is nothing sweeter than hearing God's words come from their mouths.

Peanut Butter Chocolate No Bake Dessert

I'm obviously on a dessert kick even though desserts aren't my most favorite thing.  Usually I eat a dessert (except for cheesecake) and it's too sweet for me.  However, I have seen some desserts that I just want to make on Pinterest.   I found this one last week.  It's a Peanut Butter Chocolate No Bake Dessert.  "No Bake" to me means it's less likely that I will mess it up.  :)

Peanut Butter Chocolate No Bake Dessert
  
20 chocolate cream-filled chocolate sandwich cookies, divided 
2 tablespoons butter, softened 
1 package (8 ounces) cream cheese, softened 
1/2 cup peanut butter 
1-1/2 cups confectioners' sugar, divided 
1 carton (16 ounces) frozen whipped topping, thawed, divided 
15 miniature peanut butter cups, chopped 
1 cup cold milk 
1 package (3.9 ounces) instant chocolate fudge pudding mix 

Directions 

1.  Crush 16 cookies; toss with the butter. Press into an ungreased 9-in. square dish; set aside. 

2.  In a large bowl, beat the cream cheese, peanut butter and 1 cup confectioners' sugar until smooth. Fold in half of the whipped topping. Spread over crust. Sprinkle with peanut butter cups.

3. In another large bowl, beat the milk, pudding mix and remaining confectioners' sugar on low speed for 2 minutes Let stand for 2 minutes or until soft-set. Fold in remaining whipped topping. 

4.  Spread over peanut butter cups. Crush remaining cookies; sprinkle over the top. Cover and chill for at least 3 hours. Yield: 12-16 serving

It was very rich.  Even the officer thought so.  That's saying a lot. However, if you like peanut butter and chocolate, this is a dessert for you.

Oreo Truffles

Yesterday, the kids and I made Oreo Truffles.  I found the recipe on Pinterest.  It's my kind of recipe, only three ingredients!

Oreo Truffles

1 pkg. (8 oz.) Cream Cheese, softened
1 pkg. (15.5 oz.) Oreos, finely crushed, divided
2 pkgs Semi-sweet chocolate, melted (I only needed 1 package)
Directions
1.  Mix cream cheese and 3 cups cookie crumbs until well blended.
 

2.  Shape into 48 (1-inch) balls.


3.  Dip in melted chocolate; place on waxed paper-covered baking sheet.

4.  Sprinkle with remaining cookie crumbs.
 
5.  Refrigerate 1 hour or until firm. Store in tightly covered container in refrigerator.    


They are very yummy!  They are pretty rich, so we make them pretty small so you could just pop one into your mouth and be satisfied.
